Half a cup of cooked cabbage has about a third the vitamin C you need for the day. It also provides fibre, folate, potassium, magnesium, vitamins A and K plus more. For whole cabbage choose 4 quarters.
For times when organic cabbage is hard to obtain, we also purchase Clean15 cabbage as it is known to have reduced pesticide residues. Peel away the outer leaves and discard in that case.
